Method

Have your butcher bone and tie beef; place it in a large stockpot or heavy-bottomed saucepan with just enough cold water to cover, and bring to a boil; add salt pork, bay leaves and peppercorns; cover and simmer over the lowest of heats for 3 to 4 hours, or until meat is tender, adding chicken and fresh pork after first hour.
