An old recipe from the family of Muriel Chenevix Trench
“Place meat in a large shallow recipient big enough to hold it. Rub with equal quantities of salt and saltpetre once daily for 4 days. Grind cloves, allspice and peppercorns, and combine with coarse brown sugar.
Rub beef with this mixture every second day for 3 weeks, turning it occasionally.
