Have your butcher trim a loin of baby lamb into 8 or 10 chops.
Preheat grill for 15 to 20 minutes; rub grid with a piece of suet; place chops on it; sprinkle with lemon juice and season to taste with rosemary or oregano, salt and freshly ground black pepper. Grill for 3 to 5 minutes on each side. Serve immediately.
