  • 1 loin of pork (7-8 cutlets)
  • salt and freshly ground black pepper

Method

Season pork generously with salt and freshly ground black pepper; place it on the rack of a roasting pan and roast it in a fairly hot oven (425°-M6) for 1 hour, or until pork is half cooked, basting it from time to time. Remove pork and roasting rack from pan; skim off excess fat. Thicken pan gravy with 2 tablespoon
