Cut pork into bite-sized pieces, place in a bowl, and season with salt, monosodium glutamate and sake.
Beat egg white in a bowl until stiff; add cornflour mixed with soy sauce, sake and ginger juice, and mix well to make batter. Heat oil for deep-frying to 350°F. Cover pork well with batter and fry until crisp and golden.
