  • 4 bunches watercress
  • 1 teaspoon salt

Method

Trim watercress stems and wash well, picking out all yellowed or damaged leaves. Drain. Soak for 30 minutes in cold water to which you have added 1 teaspoon salt and the juice of 1 lemon. Drain, rinse in clean water and dry.
