  • 4 thick slices ham (about ½ pound each)
  • 1 can small sweet potatoes

Method

Mash sweet potatoes with melted butter, and flavour with grated lemon and orange rind, cinnamon, bourbon or rum, and salt and freshly ground black pepper, to taste.

Spread the stuffing thickly on 2 ham steaks and top with remaining steaks. Sprinkle the steaks with brown sugar, and season with freshly ground black pepper. Wrap loosely in foil and bake in
