Method

Wash pickled or salted pork and soak, covered, for 24 hours in cold water, changing water several times.

Put fresh water in a large heatproof casserole; add meat and bring gently to a boil. Skim well and add bouquet garni, onion stuck with cloves, and peppercorns.
