  • 1 tender chicken (about pounds)
  • 4 tablespoons soy sauce

Method

Bone chicken and cut the meat into 1-inch pieces. Combine soy sauce, sake (or dry sherry diluted with a little water), sugar and ginger. Marinate chicken pieces in this mixture for at least 2 hours. Drain the chicken well, reserving marinade juices. Dry the pieces and fry in deep fat until golden. Remove from fat and drain. Then add pieces to marinade juices, stirring well so that all pi
