Ingredients

  • 4 young grouse (¾-1 pound each)
  • 4 tablespoons softened butter

Method

Combine softened butter and lemon juice in a mixing bowl, and add salt and freshly ground black pepper, to taste. Stuff birds with this mixture. Tie a thin slice of fat bacon over the breast of each bird and roast in a fairly hot oven (425°F-M6) for 20 to 25 minutes</
