  • 3 pounds shin of beef, cut into 2-inch cubes
  • 1 pound unsmoked bacon, in 1


Dice unsmoked bacon into large cubes; combine with sliced onions, olive oil and butter, and sauté in a heatproof casserole until onions are transparent. Sprinkle beef, cut into 2-inch cubes, with flour; add to casserole and continue to cook, stirring constantly, until beef browns. Then add coarse salt and freshly ground black pepper, garlic, dried orange peel, cloves and bouquet garni. P
