Brussels Sprouts au Gratin


  • 1 pound small brussels sprouts
  • salt and freshly ground black pepper
  • butter
  • 1 pint well-flavoured cheese sauce
  • 4 walnuts, finely chopped
  • 2 tablespoons freshly grated breadcrumbs


Prepare and cook Brussels sprouts as above.

Place hot seasoned sprouts in a well-buttered ovenproof dish. Pour over well-flavoured cheese sauce.

Melt 4 tablespoons butter in a small saucepan; add finely chopped nuts and freshly grated breadcrumbs; simmer for a minute or two, then spoon over cheese sauce. Bake in a moderately hot oven (400°-M5) for 10 minutes.
