Leeks in Butter

    • 12 small leeks or 8 large ones
    • ¼ pound butter
    • salt


    Clean and trim leeks as above. Simmer in boiling water for 5 minutes. Drain thoroughly.

    Place leeks in a shallow ovenproof baking dish; add butter, and salt and freshly ground black pepper, to taste, and cook in a moderate oven (375°>-M4) for 35 to 40 minutes, or until tender.
