Chinese Spinach


  • 2 pounds fresh spinach leaves
  • 3 tablespoons peanut oil or lard
  • 1 teaspoon salt
  • 1 tablespoon soy sauce, sake or dry sherry


Wash spinach leaves in several changes of water; drain and dry thoroughly. Heat oil or lard in a wok or frying pan; add spinach and salt, and cook over a medium heat for 3 minutes, stirring continually. Add soy sauce, sake or dry sherry, to taste. Serve immediately.
