Ingredients: butter; 4-6 small cos lettuces; ½ Spanish onion, thinly sliced; 1 slice bacon, diced; ¼ pint chicken stock; 2 small carrots, thinly sliced; 2 level teaspoons flour; finely chopped parsley; salt and freshly ground black pepper

Method

Clean lettuces, leaving them whole. Pare the base of each lettuce to a point. Drop lettuces into a large saucepan filled with boiling water, and boil for 5 minutes.

Pour off water; plunge lettuces into a bowl of cold water for a few minutes. Drain lettuces and press out excess moisture.
