    • 4-6 small cos lettuces
    • butter
    • 1 slice bacon, diced

    Clean lettuces, leaving them whole. Pare the base of each lettuce to a point. Drop lettuces into a large saucepan filled with boiling water, and boil for 5 minutes.

    Pour off water; plunge lettuces into a bowl of cold water for a few minutes. Drain lettuces and press out excess moisture.
