    • 1 Chinese bowl long-grain rice
    • 3 Chinese bowls cold water

    Method

    Wash rice and drain as above. Add water and boil for 3 minutes. Drain off water; fill individual serving bowls three-quarters full to allow rice to expand, place bowls in a shallow pan of boiling water, and steam, covered, for 1 hour. Be sure to have enough boiling water to steam rice, but not enough to pour over into bowls. Add more boiling water from time to time as necessary.
