Chinese Fried Rice with Mushrooms

    • 2 bowls cooked rice
    • 2 tablespoons oil
    • 1 onion, chopped

    Method

    Heat frying pan, add oil and chopped onion, and fry until brown. Then add coarsely chopped mushrooms and fry until semi-cooked. Add cold cooked rice and sauté gently until the whole begins to brown, stirring occasionally. When mixture is hot, add soy sauce, and season to taste with salt and freshly ground black pepper.
