    • 2 bowls cooked rice
    • 2 tablespoons oil
    • 1 onion, coarsely chopped

    Method

    Heat pan, add oil and fry onion until brown. Add shrimps (or prawns) and sliced peppers, and fry until semi-cooked. Then add cold rice and sauté gently, stirring continuously, until the whole begins to brown. When mixture is hot, add soy sauce, then the eggs, beaten with salt to taste, and sauté until done.
