Celeriac Salad with Mustard Dressing

    • 2 celery roots (celeriac)
    • salt

    Method

    Cook celeriac in boiling salted water until tender. Cool; peel and cut into thin strips.

    Mustard Dressing

    Combine cream, olive oil, lemon juice and finely chopped onion, and dry mustard, salt and freshly ground black pepper, to taste. Blend well.

    Marinate celeriac in this mixture overnight in the refrigerator.
