    • cold roast lamb
    • ¼ Spanish onion, finely chopped
    • 2 stalks celery, sliced
    • olive o

    Method

    Slice lamb thinly and then cut into thin strips. Combine in a salad bowl with finely chopped onion and sliced celery. Pour over it a well-flavoured dressing made with olive oil and tarragon vinegar, and seasoned to taste with salt and freshly ground black pepper.

    Just before serving, sprinkle with finely chopped tarragon and parsley.
