Potato Salad with Bacon


  • 2-3 pounds new potatoes
  • salt
  • 1 tablespoon sugar
  • 1 tablespoon vinegar
  • 2 tablespoons wine vinegar
  • 4-6 thin slices bacon
  • olive oil
  • lemon juice
  • 2 tablespoons finely chopped onion
  • 2 tablespoons finely chopped parsley
  • salt and cayenne pepper


Scrub new potatoes; cook in boiling salted water until just tender - 15 to 20 minutes; drain, peel and slice. Place potatoes in a bowl and sprinkle with sugar and wine vinegar. Toss gently.

Sauté bacon in a little oil until crisp. Drain well, pouring bacon fat over potatoes. Crumble or chop bacon finely and add to potatoes. Toss gently.

Combine 4 to 6 tablespoons olive oil with lemon juice and finely chopped onion and parsley, and season to taste with salt and cayenne pepper. Pour over salad.
