    • 3 ounces castor sugar
    • 3 ounces plain flour

    Method

    Cream 3 ounces butter in a bowl; add the sugar, and then gradually add the flour and eggs. Beat well until light and frothy. Drain the pieces of apricot and cut them in small pieces; add them to the mixture with the cinnamon, lemon rind and lemon juice, and last of all the baking powder. Mix well
