    • 1 pint blackcurrants, topped and tailed
    • juice of 2 lemons, strained
    • 3-4

    Method

    Place half of the blackcurrants in an electric blender and blend for a few seconds until puréed. Repeat the process with the remaining currants, and add them to the first purée. Add the strained lemon juice to the sugar and stir well. Add to the fruit purée. Place in freezing tray of refrigerator and freeze until almost stiff - about 1 hour.
