Ingredients

  • ½ pound plain flour
  • pinch of salt
  • squeeze of lemon juice

Method

Sieve flour and salt into a clean, dry bowl, and add lemon juice. Put the butter in the bowl, cover it over well with the flour, and then break it into pieces the size of a hazelnut. Have some iced water in a jug ready for mixing, and make a well in the centre of the flour and butter. Mix very lightly with the right hand or with a knife, pouring the water in gradually with the left hand until y
