Goose with Sauerkraut Stuffing

  • 1 goose
  • pounds fat salt pork
  • 2-3 Spanish onions, coarsely chopped

Method

Dice salt pork and sauté in a frying pan until transparent. Add coarsely chopped onions and fry until onions are transparent. Add diced apples and toss with onions and salt pork. When onions and apples are golden, add brown sugar, salt, freshly ground black pepper, thyme and caraway seed. Remove from heat. Drain sauerkraut, and toss with apple and onion mixture.
