When I was researching Peruvian roots and came across ulluco, a tuber from the highlands of Peru (as well as Colombia, ecuador, and bolivia), I didn’t expect to find it in Portland, but there it was, in cans, at my local Latin American market. It is accurately described as earthy, tasting like a cross between a potato and a beet. I found even canned ullucos appealing and love them in this classic Peruvian recipe, adapted from Maria baez Kijac’s cookbook, The South American Table. Adm
