When I was researching Peruvian roots and came across ulluco, a tuber from the highlands of Peru (as well as Colombia, ecuador, and bolivia), I didn’t expect to find it in Portland, but there it was, in cans, at my local Latin American market. It is accurately described as earthy, tasting like a cross between a potato and a beet.
