My colleague and friend elizabeth Andoh was very helpful with the research on arrowhead. During Japanese New Year’s celebrations, arrowhead (kuwai in Japanese) is colored yellow and cut to look like temple bells or pinecones. This holiday dish, which combines arrowhead with persimmons and dried plums or raisins, is a condiment or chutney. I consider Fuyu persimmons my wintertime tomato, often using them raw in salads.
