- 1 lb/455 g uniformly sized beets, any type, trimmed
- 4 or 5 fresh thyme sprigs
- Position a rack in the center of the oven and preheat to 350°F/180°C/gas 4.
- Gently scrub the beets under cool running water to remove any dirt. Pat dry. Set each beet and a thyme sprig in the center of a square of aluminum foil large enough to enclose
