Although I don’t normally buy prepackaged prepared vegetables such as coleslaw mix or, in this instance, shredded carrots, it does streamline the assembly of this salad. It is a colorful and healthy side dish to a grilled main course, especially if you also serve some grilled zucchini or asparagus and skip a starchy vegetable altogether. This salad is a summertime favorite alongside grilled lamb or chicken, and because it does not need to be refrigerated, it’s ideal picnic fare.
