Here’s a favorite, old-fashioned main-course salad reinvented with poached shrimp, diced carrots, peas, and crunchy crosnes. Salade Olivier is the proper name for the French composed salad that we have come to call Russian salad, or salade russe. It was invented in 1860 by Lucien Olivier, the chef of the celebrated Hermitage restaurant in Moscow. The traditional salad is composed of diced potatoes, vegetables, and meats bound with mayonnaise.
