Although curry paste is a condiment that is easy enough to buy ready-made, why not venture into a great DIY project and make your own? This homemade version uses fewer red chiles than some recipes I’ve seen, so feel free to add more if you want a really fiery sauce. The paste is traditionally made with a mortar and pestle; however, our busy lives might suggest the whirl of a food processor, mini-chop, or blender to speed the task.
