I developed this vinaigrette for the Smoked Whitefish Salad with Horseradish Vinaigrette, and then I started thinking about how amazing it would be on a grilled steak salad or tossed with Simple Roasted Beets. Adjust the amount of horseradish to taste. Two tablespoons seems like the right balance to me, enough to give a real kick of heat and open the nasal passages without making you cry.
