I have tears of joy every time i make this recipe, because it reminds me of holiday dinners at my grandparents’ home. To keep from shedding buckets of tears, please read the Cautionary Note before you begin.
In a food processor fitted with the metal blade, process the horseradish until finely grated. Add the vinegar, water, sugar, and salt and process until a thick paste forms. Transfer to a covered container and refrigerate overnight to allow the flavors to meld. It will keep in the refrigerator for up to 1 month.
