Goat’s milk butter is commonly sold at natural foods stores and specialty food shops. With a delicious tang and creamy white texture, this distinctive butter delivers a tartness that balances the natural sweetness of the parsnips. Use unsalted cow’s milk butter if you can’t find goat’s milk butter, but it is worth seeking out. I love it spread on a toasted baguette with a spoonful of orange marmalade. To keep the butter fresh tasting, store the unused portion in the freezer.
