If everything tastes better with bacon, then salsify is a natural partner. This dish is as easy as could be. Fry up some bacon, use a bit of the bacon fat to season fresh bread crumbs, and then cut the salsify into logs, toss with some of the bacon fat, and roast until fork-tender. The bacon-bread crumbs get scattered over the top and deliciousness ensues. This would be a terrific accompaniment to roast chicken or pork.
