Whether it is labeled “yam” or “sweet potato” in the market, the Garnet, with its red-rust skin and orange-yellow flesh, is the best sweet potato for grilling. Look for firm, unblemished potatoes that are fairly uniform in size so that all of the slices are about the same diameter. Pair the Garnets with grilled pork tenderloin or pork chops. They are equally delicious alongside grilled chicken.
