This recipe is a delicious way to use up the tasty turnip tops you end up with after making Pancetta-Wrapped Baby Turnips (following) or White Balsamic–Glazed Turnips. If you don’t have enough greens to yield 12 cups/300 g, it is fine to substitute another root vegetable top, such as radish tops or beet greens
