I think of this aromatic, warming soup as the Chinese version of “chicken soup for the soul.” It is what you want on a cold, rainy night or when you feel under the weather and need a bowlful of comfort. Briefly marinating the chicken and then partially cooking it before adding it to the soup yields a more delicate texture than you get if you simmer the raw chicken strips directly in the broth.
