The yam used to make these pancakes is known either as yamaimo (mountain tuber) or nagaimo (long tuber). In the Chinese market I frequent, it is labeled nagaimo (yes, a Japanese name), and at the Japanese market, the very same tuber is labeled yamaimo. Have I confused you yet?
