Yuca chips are supercrispy and divinely addictive. While deep-frying can be a messy hassle, yuca chips fry cleanly with virtually no splatter because the tuber contains very little water, which is what causes oil to splatter. I suggest using a mandoline, Japanese vegetable slicer, adjustable ceramic mandoline, or very sharp knife to slice the yuca crosswise into paper-thin slices. A dusting of salt is the simple way to enjoy these chips, but I also like to toss them with a favorite BBQ spic
