Smetannik, whose name derives from the Russian smetana, “sour cream,” is a gloriously rich pie, its buttery crust holding copious amounts of sour cream, jam and nuts.
To make the pastry, mix together the flour, salt and lemon rind. With a pastry blender or your fingers, cut the butter into the flour mixture until it resembles coarse meal. Work in the 2 egg yolks and water until the dough holds together, adding more cold water if necessary. Shape the dough into two balls. Wrap each in waxed paper and chill in the refrigerator for 1 hour.
