Once-upon-a-time, before coleslaw was made by supermarkets and sold in plastic tubs...coleslaw the way it used to be.

Ingredients

Mayonnaise

  • 2 egg yolks
  • 1 heaped tablespoon Dijon mustard or 1 heaped teaspoon

Method

  1. To make the mayonnaise, bring all the ingredients to room temperature and set a large bowl on a damp tea towel to prevent it from moving. Add the egg yolks, mustard, some ground white pepper and a pinch of salt, and mix well with a balloon whisk or electric beaters.
  2. Put the oil in a jug that is easy to pour from. While whisking constantly by hand or with electric
