This lovely combination of tomato, mozzarella and basil is an Italian classic. Balsamic vinegar and good olive oil make up the dressing.


  • 4–6 large ripe, full-flavoured tomatoes
  • 300 g (10 oz) fresh mozzarella


  1. Cut the tomatoes horizontally into thin slices and slice the mozzarella to a similar thickness. Sprinkle the base of a serving plate with salt and black pepper, then arrange the tomato and mozzarella in slightly overlapping circles on the plate.
