A hearty, warming salad that can be served as a main course or as an accompaniment. The lentils are cooked with the bacon for extra flavour.


  • 410 g (13 oz) small green Puy lentils

  1. In a large pan, place the lentils, piece of smoked bacon and the clove-studded onion and cover with a generous amount of water. Bring to the boil and simmer for about 15 minutes, or until the lentils are tender. Remove the pan from the heat and tip the lentils and bacon into a sieve or fine colander to drain, then run under cold water until cold. Leave to drain thoroughly.<
