This typical Provençal salad from Nice is traditionally made with tuna, but here it is served with a fillet of salmon. Perfect for a light summer supper.

  1. Bring a large pan of salted water to the boil and add the potatoes in their skins. Return to the boil and simmer for 30–35 minutes, or until they are tender to the point of a knife. Drain, then plunge the potatoes into a bowl of iced water for 5 minutes to stop the cooking process. Drain again and cut in quarters.
