A grain salad that originated in the Lebanon and is made with generous amounts of fresh mint, parsley and bulgar wheat.

Ingredients

  • 250 g (8 oz) bulgar wheat
  • 1 telegraph cucumber

Method

  1. Place the bulgar wheat in a bowl and pour in enough hot water to just cover the wheat. Leave to soak for 20–30 minutes. Peel the cucumber and cut in half lengthways. Using a teaspoon, remove the seeds from the centre, then finely dice the flesh. Place the cucumber, mint, parsley and spring onion in a medium bowl with the olive oil and lemon juice.
