A hearty salad with the Greek flavours of feta, orégano, black olives and ripe tomatoes.


  • 1 romaine or cos lettuce
  • 3 ripe tomatoes
  • 125 g (


  1. Shred the romaine or cos lettuce finely and place on plates. Cut the tomatoes into slim wedges and arrange over the lettuce with the olives and shallot.
  2. Cut the fetta cheese into 2 cm (¾ inch) cubes and scatter these over the salad with the orégano. Season with salt and black pepper.
  3. Whisk together the oil and lemon juice and pour it over the salads.
