Salade Niçoise

Salade niçoise shares the same propensity for misinterpretation as Caesar salad - one rarely sees the original version outside Nice, and even there I have encountered some real hotchpotches. There should never be any cooked vegetables used since it is actually an hors d’oeuvre based on what the French call crudités or raw vegetables. Given the cost of fresh tuna, anchovies were traditionally used by the locals. If you want to use tuna it most certainly should not be fresh. Purchase t
