Ingredients: 1 tbsp peanut oil (or just use rapeseed/canola); ½ cucumber, julienned; juice and grated zest of 3 limes; big handful of fresh coriander (cilantro), chopped; tamari (or soy) sauce, to taste; 200 g/7 oz/1 cup Camargue rice; dash of toasted sesame oil; ¼ tsp salt; 50 g/1¾ oz/⅓ cup sesame seeds, toasted; 1 sheet dried seaweed (nori); 1 red onion, diced; 2 small carrots, julienned; 50 ml/1¾ fl oz. scant ¼ cup coconut milk; 50 ml/1¾ fl oz. scant ¼ cup mango juice; 2 cm/¾ in.knob fresh ginger, peeled and minced; 1 tsp wasabi paste; 600 g/1¼ lb.skinless tuna fillet; 2–3 garlic cloves, minced; 1 tbsp toasted sesame oil
