Generally, I’m not a fan of fruit and meat combinations. The passion fruit here though is quite sharp and cuts through the richness of the meat, providing a contrast to that and to the pan juices that derive from the braised legs.
Cook the ducks as described. Pour the braising liquor into a jug and allow the fat to rise. Mix 1 tablespoon of fat with the flour. Skim off the remainder, then heat the stock.
